Protege Series – Konbusui Tsukemen

This project is led by Ryo, a young passionate Chef who currently heads Taro’s Ramen CBD.  He brings a Brisbane first, Konbusui Tsukemen dip style ramen.   Under Taro’s supervision, Ryo brings a new perspective to the Limited edition events under the new Protégé series.

Taro' Ramen CBD Queen

 

“Konbusui” translates to Kelp Water. It is the viscous kelp water coating the noodles to give it another layer of flavour along with super slippery mouthfeel. Ryo has also added Bonito for extra umami.   

Noodles: Weston Milling durum wheat base with 3% Egg white. 多加水40% high moisture content, No.16 cutter, straight thick cut. Cooked for 5 minutes and ice washed for added texture. 

Choose from S: 135g / M: 200g / L: 270g (precooked)

Tsuke Soup: Clear double grouper (oven baked + dehydrated dashi) with a hint of yuzu.

Toppings: A prawn wonton lurks in the tsuke soup.  A whole kelp infused Ajitama, lemon and shallots garnish and on a separate plate, Bangalow Sweetpork Sous Vide Charsiu and Fermented Bamboo. 

Ask for soup wari and we will bring some golden triple soup to finish the remaining salty dip soup.
